Roasted sweet potato, russet potato, carrot, turnip and peas are seasoned like a samosa filling, with ginger, garlic, green chilies, cilantro and Indian spices. The samosa root veggies are served with brown basmati rice, seasoned lentils, turmeric coconut roasted cashews, and a tamarind yogurt dressing made with our aquafaba-based vegan mayo.
