Beets and Hummus, Together at Last

When I decided to make a beet hummus, even I thought.. ummmm yeah, this will probably be gross... but I’ll try anyway. And I love beets!

But it surprised me. It’s. SO. GOOD! It may look intimidating, but it is savory, sweet, vinegary, creamy and fluffy in texture and absolutely beautiful. I’ve been eating it by the spoonful, spreading it on toasted sourdough with tons of black pepper, and dipping veggies in it.

Give it a shot! Don’t be scared. Beets are friends. 🤗😂
